  • 4 cups of ice cubes
  • 2 pounds of russet potatoes
  • Get a medium lime
  • 1 to 2 tablespoons adobo sauce, plus 1 to 2 chipotle peppers in adobo sauce
  • Half cup mayonnaise
  • 1 and a half teaspoon of a kosher salt
  • Half teaspoon of fresh black pepper
  • Half teaspoon of onion powder
  • Quarter teaspoon of garlic powder
  • 2 quarts of vegetable oil


  1. Fill a large mixing basin halfway with ice and halfway with cold water.
  2. Take 2 pounds of russet potatoes, scrub under cold running water, and pat dry using paper towels.
  3. Carefully slice the potatoes to 1/4-inch or 1/8-inch thin with a mandoline set to waffle cut or a hand-held crinkle cutter.
  4. Begin by cutting the potato crosswise, then rotate it 90 degrees between cuts. Place in an ice bath for 15 to 30 minutes to chill.
  5. Place each in a small bowl: 1 to 2 tablespoons adobo sauce, 1 tablespoon of lime juice, plus 1 chipotle pepper in adobo sauce, Half cup mayonnaise, and half teaspoon of kosher salt: whisk to blend.
  6. In a second small bowl, stir together the remaining 1 teaspoon kosher salt, 1/2 teaspoon ground black pepper, 1/2 teaspoon onion powder, 1/4 teaspoon garlic powder, and 1/4 teaspoon smoked paprika.
  7. In a large Dutch oven, heat 2 quarts of vegetable oil over medium heat until it reaches 260°F. Add a little slice of potato to see whether it’s hot enough. It should sink and little bubbles should escape.
  8. Meanwhile, drain and rinse the potatoes under cool water. Pat potatoes dry with a clean dish towel (or huge sheets of paper towels). Paper towels should be used to line a big rimmed baking sheet.
  9. Add the fries in 2 or 3 batches and fry for 3 minutes, keep stirring with a spoon to prevent sticking. The potatoes will be slightly softened, with no color. Transfer to the baking sheet using a slotted spoon and arrange in a single layer.
  10. Increase the heat to medium-high and bring the oil to 350 degrees Fahrenheit. Add a little slice of potato to see whether it’s hot enough. It should ascend to the top and erupt in a flurry of bubbles. Using paper towels or a wire rack, line a second baking sheet.
  11. Fry waffle fries until golden brown and crispy, it will take about 1 to 3 minutes. Individual slices should be flipped with a slotted spoon to ensure even browning. Place the second baking sheet on top of the first.
  12. Toss the fries in the seasoned salt mixture to coat them. (It may appear like there is a lot of seasoning, but some will fall through the openings.) Dip the chips in the chipotle-lime mayonnaise.

  1. Arrange the frozen waffles in layers in the air fryer. It is fine if they overlap; do not add any oil, as it is not required.
